No amount of threat from possible heavy rains can change the minds of Janice and Aries to have their wedding reception at Sitio Remedios. As the couple are both London-based, it was not easy for them to get their preferred booking at the majestic Paoay Church. Luckily, Sta. Monica Church in Sarrat was available for June 18, and so we're off!
At first we did not believe that Janice really wanted SINANGLAO for her guests. Sinanglao, that Ilocano favorite soup of innards and more innards that might not be glamourous enough to belong to a wedding banquet. But what Chef Nic did is to glorify the lowly sinanglao into an irresistible Consommé. It turned out to be the most difficult item to do on the list. Lucky for the couple's guests as well, this year's harvest of oysters is bountiful enough to come up with a feast of oysters for the cocktails: oysters in yaki sauce, breaded with tartare sauce, and ceviche.
